Beet salad

You will need:

  • 2 lbs of beets
  • 1 cup chopped carrots
  • 1 or 2 large sweet potatoes, chopped
  • 1/2 cup caramelized onions* click here for recipe
  • olive oil
  • salt & pepper to taste

Chop the greens off the beets, set aside. Boil beets on medium heat for about an hour, add 1 teaspoon of vinegar to the water to keep them from bleeding. Let them cool before peeling. Chop the cooked beets, set aside. Meanwhile in a large pan, toss in sweet potatoes, 2 tablespoons of olive oil, carrots and onions; cover on medium heat for about 20 minutes or until potatoes & carrots are tender. Toss in beets and chopped beet greens, let sit for a few minutes.Add salt and pepper, serve warm.

Vadalia onion corn on the cob

Drizzle TS Vadalia onion dressing over corn on the cob before putting on the grill & skip the butter & salt for a really yummy/healthier side dish!

Carmelized onions

You will need:

  • 5-6 onions, peeled & sliced
  • olive oil
  • butter (optional)
  • sugar (optional)

In a large shallow pan, on medium-high heat, drizzle olive oil until bottom of pan is completely covered. Toss in onion slices. Let the onions cook for 10 minutes.

At this point you can add 2 tablespoons of butter if you’d like, and 1 tablespoon of sugar(I have tried it with and without & actually prefer to skip the sugar)otherwise let the onions cook on med-high heat for at least an hour. You will see the sugars caramelizing. *the trick is to let the onions brown but not burn. ** If you notice the onions drying out and sticking to the bottom of the pan, add water.

I never knew it was so easy to caramelize onions! Its amazing how different onions taste once the sugars are released. We used them to top of steaks, burgers and ate them just by themselves!

Shrimp dip

You will need:

  • 1 tablespoon melted butter
  • 1 tablespoon finely chopped onion
  • 1 teaspoon parsley flakes
  • 1 teaspoon lemon juice
  • 1 teaspoon celery seed
  • 14 ounce can shrimp pieces finely chopped
  • 4-5 tablespoons mayonaise

Mix all ingredients together, adding the mayo as you go. Serve over crackers or with veggies.

Let me tell you, this shrimp dip is fabulous! I despise shrimp dip and all of its fishiness but this dip is different. This is a must try!
