Chicken veggie pasta with spicy feta cream sauce

This meal is totally my style. It’s one of those throw everything that is left in your fridge together over some pasta for dinner type of meals. This dish is so versatile  You can use whatever veggies you have in your fridge, or whatever veggies you prefer. Top it with this spicy, cheesy, cream sauce, and you have yourself a simple, but really delicious meal! I can’t tell you how much my whole family loved this dish. I promise once you make it, you will be adding it to your meal rotation.

Ingredients
  • • 16 oz. whole wheat pasta
  • • 2 tablespoons olive oil, divided
  • • 2 boneless skinless chicken beasts, cut in 1″ cubes
  • • ¼ teaspoon salt
  • • ¼ teaspoon pepper
  • • ½ cup onion, diced
  • • 2 cloves garlic, minced
  • • 1 yellow bell pepper, chopped
  • • 1 red bell pepper, chopped
  • • 1 cup asparagus, chopped in 1″ pieces
  • • 1 cup grape tomatoes
  • • 2 tablespoons butter
  • • 2 tablespoons flour
  • • 2 cups half & half
  • • ¼ teaspoon of red pepper flakes
  • • 1 cup feta cheese
Instructions
  1. Cook your pasta and let it drain.
  2. Sprinkle the chicken breast with salt and pepper, cut into bite size pieces, heat 1 tbsp. olive oil in a pan over medium heat.
  3. Cook chicken until done.
  4. In another large pan add the remaining olive oil and begin sauteing the onions for 2 minutes.
  5. Add in the garlic and bell pepper and saute another 2 mins.
  6. Then toss in any other woody veggies (broccoli, asparagus) saving the tomatoes until the very end.
  7. When all the veggies are cooked to your liking, add the chicken to the mixture.
  8. Start your sauce.
  9. Melt butter in a pan over medium heat.
  10. Once melted add flour and stir to make a roux.
  11. Slowly add half and half while stirring to prevent clumping.
  12. After about 2 minutes, add red pepper flakes and allow the sauce to simmer until you can see some bubbles, keep stirring.
  13. Once your sauce starts to thicken you can add your cheese and stir until its incorporated.
  14. Mix sauce with veggies and pour over pasta.
