Cilantro-lime sweet potatoes

You will need:

  • 2 lbs sweet potatoes, sliced
  • 1/4 cup plus 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 1/2 tablespoons freshly squeezed lime juice
  • 1 1/2 tablespoons roughly chopped cilantro

Mix olive oil, salt, pepper, lime juice & cilantro in a bowl. Toss in sweet potatoes and coat with mixture. Bake on a tinfoil-lined baking sheet at 350° for 2-3 minutes per side.

So delish! Don’t be afraid to add more lime juice because it really makes this dish! This is Emeril Lagasse’s recipe but I skipped the onions.
