Creamed spinach

You will need:

  • 1 bag organic baby spinach, stems removed
  • olive oil
  • 1 vidalia onion, peeled and chopped
  • 3 tablespoons butter
  • 4 tablespoons flour
  • 1/4 cup whole milk
  • 1/2 cup swiss cheese, shredded
  • cracker crumbs (for topping)

In a large pan drizzle about 2 tablespoons of olive oil and heat spinach on medium just until wilted. In another pan, on medium heat, whisk together, butter, flour and milk until thick. Add flour mixture to spinach and mix. Then add cheese and onions. Place spinach mixture into a greased casserole dish and top with cracker crumbs. Bake at 350° for 20 minutes.

Words can not describe how amazing this tastes. I have been trying to perfect creamed spinach for some time now and I did it! You have to try this one. ALSO, a great way to get your kids to eat spinach.
