You will need:
- 3/4 cup of butter, softened
- 2 eggs
- 1 1/2cup brown sugar
- 7 mashed, ripe bananas
- 1/2 cup of applesauce
- 1/2 cup crushed pineapple
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1 cup cake flour
- 1 1/2 cups all purpose flour
- chocolate chips, walnuts (optional)
Cream butter and brown sugar in your mixer. Then add eggs. In a separate bowl mash bananas and mix with applesauce and pineapple. Add to butter mixture in the mixer. Add the baking soda, salt, vanilla, and cinnamon. Mix until smooth. Slowly add the flour while mixing. Once the batter is smooth, pour it in a greased loaf pan and bake at 325° for an hour. *you may need to bake it longer than an hour. Jiggle the pan and if the center doesn’t jiggle, thats how you know its done.
I have tried many different banana bread recipes and this one is perfection. The secret ingredients are the applesauce and pineapple. They make it so moist! This loaf was gone in 1 day at our house! I always stock up on the ripe bannas at the grocery store that are super cheap and then make extra loafs to freeze. This recipe freezes really well!
Sometimes before putting it in the oven I will top the batter with chocolate chips so they bake right into the top of the loaf.
