These were so delicious. I knew as soon as I saw this recipe in this month’s issue of Family Fun, that I had to make it. It is so simple I would harldy even call it a recipe but it takes good care of those mexican cravings we all have, on a daily basis. That’s not just me right? Ok well even if you don’t love mexican food as much as I do, you have to try these. We made a gluten-free version but you can use regular crusts too. What is so great about them is that the kids can get involved in making them with you. I love getting my kids involved in preparing supper because sometimes they will look past the fact that they don’t like avocados or cilantro, and just eat it because they made it themselves.Sneaky mama strikes YET again. These are like Taco Bell’s Mexican pizza 100 times healthier and yummier, I promise. Come on! Don’t pretend you don’t indulge in the goodness/nastiness that is Taco Bell once in a great while. You just have to sometimes.
- 2 gluten-free frozen pizza crusts (Rudi’s seemed to be the best tasting) OR homemade pizza dough
- ½ can refried beans
- ½ cup salsa
- 2 tablespoons cilantro
- 1 cup shredded cheese
- 1 avocado, sliced
- Spread refried beans on pizza crust
- Drizzle with salsa
- Sprinkle with cheese
- Bake according to pizza crust package
- After baking, top with avocados and cilantro
