You will need:
- 1 lb lean ground sirloin (grass-fed works the best because you will not be draining the fat)
- red, green, orange & yellow peppers, seeds and stems removed
- 2 cans tomato soup
- 1 can corn
- 1 cup your favorite rice (uncooked)
- 1 cup sharp cheddar cheese
- 2 tablespoons ts onion onion
Place hallow peppers in a greased baking pan. Mix together raw beef, 1 can of tomato soup, corn, onion onion, and rice. Stuff peppers with mixture. Pour remaning soup over the peppers and top with cheese. Bake at 350° for an hour, serve warm.
*as you can see my mix filled 6 large peppers perfectly, to give you an idea of how many this will feed.
