Spinach & artichoke quiche

You will need:

In a greased baking dish press crushed ritz crackers, then pour melted butter over the top. Bake crust for 10 minutes at 350°.

In a mixing bowl whisk together eggs, milk, artichoke and spinach dip mix, and mozzarella. Stir in spinach. Pour over crust and bake an additional 45 minutes or until eggs are cooked through.Top with additional mozzarella.

A great way to use up fresh spinach that is about to go bad, at least that is why I made it! :)

Chicken Alfredo bake with spinach & chive linguini

You will need:

  • 1 packet ts viva garlic alredo mix
  • 1 1/2 cups heavy cream
  • 1/2 cup whole milk
  • 2 cups cooked, shredded chicken (I used rotisserie)
  • 2 cups frozen peas
  • 1/2 cup grated parmesan cheese
  • 1/2 cup grated asiago cheese
  • 1 package Trader Joes spinach & chive linguine OR 2 cups of your favorite noodles

In a medium sauce pan whisk together heavy cream and garlic Alfredo sauce mix. Heat on low, stirring occasionally for 10 minutes. In a greased 9×9 pan layer uncooked noodles and shredded chicken, then pour Alfredo sauce mixture over the top. Layer peas on top of that, then pour whole milk over the peas. Sprinkle with cheeses and bake at 350° for 40 minutes or until noodles are cooked.

This is one of my all-time favorite Tastefully Simple products and I use it for so many chicken bakes and casseroles. I don’t even care about the calories! This is comfort food!

Gluten-free chili cheese dog bake

You will need:

  • 2 cans organic chili
  • 6 gluten-free beef hot dogs
  • 6 gluten-free tortillas (brown rice tortillas)
  • shredded cheddar cheese
Here are the brands I used:
Amy’s organic chili- 1 can spicy, 1 can black bean chili
Ezekiel tortillas (this brand has the best bread too). The sprouted grain tortillas we used are NOT gluten-free but they make brown rice tortillas that are gluten-free you can use.

Spread one can of chili on the bottom of a greased pan. Next roll tortillas around hotdogs and layer on top of chili. Spread another can of chili on top of tortilla rolled hot dogs, then sprinkle with cheese. Cover with foil & bake at 425° for 30 minutes.

Cheesy basil balsamic zucchini bake

You will need:

In a large mixing bowl toss zucchini, squash, dipping oil, dried basil, onion onion, & cheese, mix until the veggies are coated. Dump into a greased casserole dish, top with additional cheese. Bake at 350° for 40 minutes.

This is a perfect side dish for any meal, or a meal in itself! Good way to use up those zucchinis from the garden, beyond fried zucchini or zucchini bread.

Chicken Alfredo bake

You will need:

  • 1 pkg TS viva garlic Alfredo mix
  • 2 cups heavy cream
  • 1 cup milk
  • 1 cup shredded parmesan cheese
  • 2 cups cooked, shredded chicken (rotisserie is best)
  • 1 1/2 cups uncooked pasta

In a pot on medium heat, whisk Alfredo mix with heavy cream until thick and bubbly. In a 9×9 greased baking dish layer uncooked noodles, Alfredo sauce, chicken & milk. Bake at 350 ° for 20 minutes then add shredded parmesan. Broil an additional 5 minutes. Garnish with additional cheese, serve with garlic bread.
