3 layer poke cake

I have been wanting to make a poke cake ever since we were at one of Jack’s friends birthday celebrations and they served it. It is so refreshing! The reason it is called poke cake is because you poke holes in the cake and pour Jello in. Then you keep it cool so the Jello fills the crevices of the cake oh-so-perfectly. Can you tell I am passionate about this cake?

You can either use boxed white cake mix or make a cake from scratch, which is what I did. Here is the exact recipe I used, and the best white cake recipe I have found.

If you are using box cake mix: Bake as directed on the back of the box. When the cake is done let cool for 10 minutes, then poke holes in the top with a fork. Mix together 1 cup boiling water, with 1 small Jello packet. Pour over the top. Refrigerate for at least 4 hours, but for best results at least 8 hours. If you are wanting to do two layers, you should make sure both layers have been in the fridge for at least 2 hours before frosting together.

Use Cool Whip to frost all over cake and in between layers.

* I have tried making a frosting for poke cake, but trust me, plain old Cool Whip is the best thing ever on this cake.

I did three layers but divided up the cake mix into three equal parts. Then I used three different color Jello packets for each one.

Literally the tastiest cake I have ever made. I can’t describe just how refreshing it is!

Funfetti cake batter dip

I have been eyeing up this recipe on Pinterest for quite sometime now. I was just turned off because I really don’t like using box cake mixes. I decided to substitute the plain non-fat yogurt for french vanilla organic yogurt, and the regular cool whip for a natural brand of cool whip (one with no HFCS or hydrogenated oils). Then I used a box of plain white organic cake mix and just added the sprinkles myself. I would say it turned out to be a tasty success! I would be curious to know how this turns out using cake batter made from scratch though…anyone tried it?

You will need:

  • 2 cups vanilla (or plain) yogurt
  • 1 cup cool whip
  • 1 box cake mix (funfetti or white)
  • sprinkles (optional)

Whip it all together and serve with animal crackers! Delicious! My kids love this!

Birthday cake cinnamon rolls

You will need:

Cinnamon rolls:

  • 1 1/2 cup hot water
  • 1 packet yeast
  • 2 tablespoons sugar
  • 1 1/2 teaspoon salt
  • 1/4 cup olive oil
  • 1 cup yellow cake mix
  • 4-5 cups flour

Filling:

  • 1/2 cup butter, melted
  • 1 tablespoon cinnamon
  • 1 cup brown sugar
  • 1/2 cup yellow cake mix

Icing:

  • 3 cups powdered sugar
  • 1/4 cup yellow cake mix
  • 2 tablespoons butter, melted
  • 1 cup milk
  • 1/2 teaspoon vanilla
In a large mixing bowl, pour the hot water. Then whisk in the yeast & sugar. Let the mixture sit for at least 3 minutes. Stir in olive oil, salt and flour. Pat your hands with flour and use additional flour on the dough so you can knead it. Knead the dough until it becomes soft and elastic. Cover with a clean dishcloth and let rise for 45 minutes.

Roll out the dough on a floured surface until it’s 1/2 thick. Drizzle melted butter over the dough then sprinkle with cinnamon, sugar and cake mix. Roll tightly into a long roll then slice 2 inch pieces from the roll. Place rolls on greased & floured baking sheet and bake for 20 minutes at 375 °.

Beat together powderred sugar, cake mix, butter, milk and vanilla. Drizzle over cinnamon rolls & sprinkle with rainbow sprinkles. Serve warm.

These are so delicious! This is a great basic cinnamon roll recipe by itself if birthday cake isn’t your thing (just don’t add the cake mix where it is called for). I wrapped the extra’s in tinfoil and then froze, so we can take them out and individually warm them up for breakfast. Yum!

Nana’s *banana chocolate chip* cake

You will need:

Mix together cake mix, bananas, chocolate chips, eggs & nuts. Pour in greased 8×8 pan and bake at 350° for 45 minutes.

This cake is usually made with chopped apples(hence nanas apple cake) but we took a chance on our craving of the moment- bannas and chocolate. It_was_awesome.
