Crock pot southwest chicken tacos

You will need:

  • 1 can black beans
  • 1 cup water
  • 2 boneless skinless chicken breasts, raw
  • 1 packet southwest taco seasoning
  • 1 tablespoon ts Fiesta party dip mix
  • 2 tablespoons fresh cilantro, chopped
  • tortillas
  • taco fixings (refried beans, cheese, sour cream, salsa, corn)

Place chicken breasts in crockpot, sprinkle seasoning packet and fiesta dip mix over the chicken. Add the black beans, cilantro and 1 cup of water. Heat on low for at least 4 hours or up to  8. Pull chicken breasts apart to shred. Serve on tortillas and top with your favorite toppings.

Chicken Alfredo bake with spinach & chive linguini

You will need:

  • 1 packet ts viva garlic alredo mix
  • 1 1/2 cups heavy cream
  • 1/2 cup whole milk
  • 2 cups cooked, shredded chicken (I used rotisserie)
  • 2 cups frozen peas
  • 1/2 cup grated parmesan cheese
  • 1/2 cup grated asiago cheese
  • 1 package Trader Joes spinach & chive linguine OR 2 cups of your favorite noodles

In a medium sauce pan whisk together heavy cream and garlic Alfredo sauce mix. Heat on low, stirring occasionally for 10 minutes. In a greased 9×9 pan layer uncooked noodles and shredded chicken, then pour Alfredo sauce mixture over the top. Layer peas on top of that, then pour whole milk over the peas. Sprinkle with cheeses and bake at 350° for 40 minutes or until noodles are cooked.

This is one of my all-time favorite Tastefully Simple products and I use it for so many chicken bakes and casseroles. I don’t even care about the calories! This is comfort food!

Crock pot fajitas

You will need:

  • 1 red pepper, sliced
  • 1 green pepper,sliced
  • 1 yellow pepper, sliced
  • 2 small onions, sliced
  • 2 chicken breasts, cut in strips (or steak)
  • 1 packet of your favorite taco/fajita seasoning
  • 1 tablespoon ts fiesta party dip mix
  • 1 cup water
Slice all the veggies and meat in long strips and place in the crock pot. Top with seasonings and water. Cook on low for 8 hours or until meat is tender. Top with sour cream, cheese, salsa, guacamole, or any of your favorite toppings!

We had my sister-in-law and her husband over for din din a few weekends ago and these were on the menu. They turned out really yummy. I was worried the veggies were going to be soggy after cooking in the crock all day (we like our veggies crunchy) but they weren’t at all! Will be trying this with steak next time, so good. The meat gets so tender from cooking so long on low.

Spinach & herb chicken salad

You will need:

Mix together mayo and spinach dip mix, then stir in celery and chicken. Store in the fridge for at least 4 hours. Serve over crackers, on lettuce, or a bun.

My new go-to chicken salad recipe. Perfection!

Vidalia onion grape chicken salad

You will need:

Mix grapes, celery, chicken, and dressing. Refrigerate for at least 4 hours. Serve on a bun or over crackers.
