Chai tea & cinnamon muffins

These cinnamon muffin melts may be my favorite baked good from Tastefully Simple. They are delicious and all you have to do is add water to the mix and throw them in the oven! When they come out, let them cool briefly, then dip the tops in melted butter and the cinnamon sugar (also included).

They turn out perfectly every time! I make them quite often when I have guests over just because they are so simple and everyone loves them! Oh and lets not mention how much my kids like them. They eat off the cinnamon sugar topping and then want me to dip the half eaten muffin again in the sugar. :) It’s safe to say I am passionate about these muffins and there is a reason why Tastefully Simple has never discontinued them. You can view/order cinnamon muffin melts here!

Serve them with Tastefully Simple’s famous Oh My! Chai or an Oh My! Chai chiller! For a chiller just mix 1 scoop of Oh My Chai with 6 oz cold milk and ice in a shaker.

Not a chai fan? There are many other yummy options! Try a Caramel Mocha Frappe or Sweet S’more Cocoa!  I am so happy with all the new yummy drinks TS has to offer this season! Great holiday gifts and perfect for entertaining!

Birthday cake cinnamon rolls

You will need:

Cinnamon rolls:

  • 1 1/2 cup hot water
  • 1 packet yeast
  • 2 tablespoons sugar
  • 1 1/2 teaspoon salt
  • 1/4 cup olive oil
  • 1 cup yellow cake mix
  • 4-5 cups flour

  • 1/2 cup butter, melted
  • 1 tablespoon cinnamon
  • 1 cup brown sugar
  • 1/2 cup yellow cake mix

  • 3 cups powdered sugar
  • 1/4 cup yellow cake mix
  • 2 tablespoons butter, melted
  • 1 cup milk
  • 1/2 teaspoon vanilla
In a large mixing bowl, pour the hot water. Then whisk in the yeast & sugar. Let the mixture sit for at least 3 minutes. Stir in olive oil, salt and flour. Pat your hands with flour and use additional flour on the dough so you can knead it. Knead the dough until it becomes soft and elastic. Cover with a clean dishcloth and let rise for 45 minutes.

Roll out the dough on a floured surface until it’s 1/2 thick. Drizzle melted butter over the dough then sprinkle with cinnamon, sugar and cake mix. Roll tightly into a long roll then slice 2 inch pieces from the roll. Place rolls on greased & floured baking sheet and bake for 20 minutes at 375 °.

Beat together powderred sugar, cake mix, butter, milk and vanilla. Drizzle over cinnamon rolls & sprinkle with rainbow sprinkles. Serve warm.

These are so delicious! This is a great basic cinnamon roll recipe by itself if birthday cake isn’t your thing (just don’t add the cake mix where it is called for). I wrapped the extra’s in tinfoil and then froze, so we can take them out and individually warm them up for breakfast. Yum!

Cinnamon roll apple pie

Apple pie

You will need:

  • 8-10 apples ( any kind you want, tart works the best )
  • 1 pie crust ( or if you have the time, make your own!)
  • 1 tube of pre-made cinnamon rolls
  • 1/2 cup of sugar
  • 3 tablespoons butter
  • 2 teaspoons cinnamon

Grease your pie pan. Press cinnamon rolls into the bottom of your pan as your crust. Make sure you go all the way up the sides. ( In my picture I had not finished up the sides yet!)

Peel, core & chop up apples. Throw those on top of your cinnamon roll crust.

Sprinkle sugar and cinnamon evenly over apples. Slice butter into two even slabs and place over apples.

Top with pre-made (or your homemade :) ) pie crust and pinch together with cinnamon rolls to close. Make slits in the top. Then cover the outer edges with tin foil. This will make sure the edges do not get burnt as they cook faster than the inside.

Bake at 425° for 40 minutes. Remove tinfoil and bake for another 10 minutes. Serve with ice cream or cool whip.

This dessert really is “easy as pie”! Very simple and delicious apple pie recipe! The cinnamon roll crust adds a little kick of cinnamon.
