{crockpot} White chicken chili

Place chicken breasts, salsa, beans, chicken broth, chili seasoning,  and fiesta mix in the crock put on medium heat. Heat for 6-8 hours, adding water if need be. When beans are cooked, use a potato masher to mash (most) of the beans and the chicken. Stir in cheese right before serving. Serve warm top with cheese.

* note: I added 2 jars of salsa this time. because we like it chunky. That is why my soup didn’t really turn out “white”.




Sweet potato burgers w/ garlic cream sauce & avocados


You will need:

  • 2 cups mashed sweet potatoes- about 2 potatoes
  • 2 tablespoons TS garlic garlic
  • 1 cup cannellini benas
  • 2 garlic cloves, minced
  • 1/3 cup panko bread crumbs
  • 1/3 cup flour
  • 1 large egg, lightly beaten
  • 1 1/2 teaspoons smoked paprika
  • 1 teaspoon TS onion onion
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/8 teaspoon cumin
  • 2-3 tablespoons olive oil
  • 1 avocado, sliced
  • 2/3 cup plain greek yogurt
  • 1 teaspoon maple syrup
  •  buns

Pierce potatoes with a fork , microwave for 5 minutes, remove and cook another 5 minutes. Slice in half ans scoop out the potatoes. Mash beans with a fork in a large bowl. Stir in sweet potatoes, spices, salt, pepper, 1 tablespoon of the garlic garlic, egg, flour and Panko bread crumbs. Place bowl in fridge for  20 minutes. While mixture is chilling,  make up your yogurt sauce. Combine yogurt with 1 tablespoon garlic garlic, maple syrup, and a dash of salt and pepper.

Heat a large skillet over medium heat and add 2 tablespoons olive oil. Remove mixture from fridge and form into 4 large patties or mini patties, then place in the skillet once hot. Make sure to let  them fully cook on one side before flipping them so they don’t fall apart. This takes about 5-6 minutes. Then, add more oil if needed (this really helps cook them) and flip burgers very carefully.Toast buns.

Top burgers with sliced avocado and garlic cream sauce.
