Crock pot fajitas

You will need:

  • 1 red pepper, sliced
  • 1 green pepper,sliced
  • 1 yellow pepper, sliced
  • 2 small onions, sliced
  • 2 chicken breasts, cut in strips (or steak)
  • 1 packet of your favorite taco/fajita seasoning
  • 1 tablespoon ts fiesta party dip mix
  • 1 cup water
Slice all the veggies and meat in long strips and place in the crock pot. Top with seasonings and water. Cook on low for 8 hours or until meat is tender. Top with sour cream, cheese, salsa, guacamole, or any of your favorite toppings!

We had my sister-in-law and her husband over for din din a few weekends ago and these were on the menu. They turned out really yummy. I was worried the veggies were going to be soggy after cooking in the crock all day (we like our veggies crunchy) but they weren’t at all! Will be trying this with steak next time, so good. The meat gets so tender from cooking so long on low.
