Sunny-side-up ground beef hash

You will need:

  • 1 lb. ground sirloin
  • 2 potatoes diced OR 2 cups frozen hash browns
  • 1 tablespoon ts onion onion OR 1 small onion chopped
  • salt and pepper to taste
  • eggs, cooked sunny-side up

Heat beef over medium heat until browned (drain if need be, but if you are using grass-fed beef you shouldn’t need to drain). Turn heat to low and add onion onion, hashbrowns, and salt & pepper. Heat until hasbrowns are hot. Top with eggs and mix with that yolk-ey goodness!

If you are using fresh onions and potatoes: heat onions and potatoes on medium in a separate pan,with a little olive oil, making sure the potatoes are tender and the onions are translucent before adding to the beef.

Slow cooker stuffed peppers

Stuffed peppers

 

You will need:

Combine first two ingredients, set aside.

Cut the top off each pepper; remove core, seeds and white membrane. In a bowl combine remaining ingredients; mix well and spoon into peppers.

Stand peppers up in a slow cooker. Pour soup over them. Cover and cook on low for 7-8 hours, until peppers are tender.

Of course we topped them with shredded cheese! Only in Wisconsin!

Slow cooker pesto lasagna

 

Lasagna

 

You will need:

In a large skillet over medium heat, cook beef with Onion Onion until beef is no longer pink. Add Dried Tomato & Garlic Pesto Mix, sauce, water and paste and stir to blend. In a large bowl, combine cottage cheese, parmesan and mozzarella. Spray your slow cooker with cooking spray. ( you can use a crock pot if that’s all you have but it is easier to use a rectangle slow cooker for lasagna .) Spoon a layer of meat mixture onto bottom of slow cooker. Add a double layer of uncooked lasagna noodles- break the noodles to fit slow cooker if needed. Top noodles with a portion of the cheese mixture, then top with meat mixture. Repeat the layering of noodles, cheese and meat sauce until all ingredients are used. Cook on low for 6 hours. Check halfway through cooking- if lasagna is too dry add 1/2 cup of water.

 

Best and easiest lasagna I have EVER made! Our whole family loved this!
