You will need:

• chicken breasts, sliced in half the long way
• 1 egg
• 1 tablespoon TS fiesta party dip mix
• TS giddy-up guacamole ( for the recipe click here & to purchase mix click here)
• 1 cup tortilla chips, crushed

Spread guacamole onto chicken, then roll chicken into a pinwheel, using a toothpick to hold it together if need be. In a medium sized bowl whisk the egg. In another medium sized bowl mix the fiesta dip mix and the tortilla chips. Dunk chicken pin wheel in the egg making sure it is fully coated. Then cover the chicken with the tortilla chips. Place in a greased baking dish and drizzle remaining egg over the chicken. Bake at 350° for 30 minutes or until chicken is no longer pink and chips are crispy. Serve with additional guacamole and rice.
